Whole Grain Mustard Encrusted Tenderloin Roast.

Twas the Saturday before Xmas the gifts were all wrapped.

The son was coming home and the wife was all smiles.

Yet there was still a big problem, no meal was in play.

All factors were weighed out, all cost taken in to account.

She’s was breaking her strict diet the choice was too hard to make.

There was Meyer Lemon Brisket or Pan Seared Filets or Tenderloin Roast or Almond-Crusted Salmon.

The process has now taken over a week.

Her head was spinning what would she have me make?

I looked at a lot of recipes to get the idea how to cook this meal in the end I went with my gut almost simple but added a twist when I saw the jar of Trader Joe’s whole grain mustard in the pantry. I grew up with a roast beef that had silvers of garlic inserted in the layer of fat on top and was covered with yellow mustard then roasted, I think Paul of Paul’s Market (used to be in north Falmouth MA)  taught her how giving away his trade secrets to her warm smile. Anyway these days I have gotten more adventurous but found that back to the basic with this cut of meat works best. We by passed Wholefoods and went to Wegman’s they have pretty good quality and the prices seem lower. I hate shopping there just too many people all pushing and shoving, but every once in a while won’t hurt me. We still have to try the 6 AM shopping time we hear the aisles are pretty open at that time. Anyway….

Ingredients:

  • 2 lbs. center cut tenderloin roast
  • 1 jar of Trader Joe’s whole grain mustard – opened
  • Kosher salt, black pepper and olive oil

How:

Preheat the oven to 425 degree with rack in middle. I used convection cooking this time it affected my cooking time

Rinse and paper towel dry the meat

Season liberally with salt and pepper let and bring to room temp or there about

Pat dry again

Tie with twin every ½” or so to keep the roast evenly shaped for even cooking.

Don’t tell them but I trimmed the skinny side off the roast and stuck in freezer and will make a pan seared oven roasted filet meal at a later date for me, only for me just for me!!

Rub olive oil all over the meat and then season again with some salt and pepper

Spoon the mustard on roast and rub to cover liberally using as much as is required. I think I used about 1/4 to 1/3 cup

Bring meat to room temperature or there about

Place meat on rack in shallow pan if convention or roasting pan if not

Roast until temp is 120 degree for rare 125 degree for medium rare

Most of the recipes I saw said cook for 25 minutes but it took me about 40-45 minutes in convection oven. Lyn says maybe because it cooks from inside out in convection.

Remove and let sit for 15-20 minutes uncovered.

While this is cooking you can prepare your sides, in this case smashed garlic mashed potatoes and mixed vegetable in a butter sauce. Oh I had put the mashed potatoes in the turned off oven to keep warm and forgot to leave a pot holder on the handle when I took back out to put in serving dish. OW! Cooking battle scars are so much fun.

This was surprisingly easy to prepare and the roast melted in your mouth this got the three heads bobbing approval since Mike was here to share.100_1157

Seafood and or Chicken

What is New Orleans without a big bowl of Gumbo ?  Here are two recipes one for the seafood lovers and one for those who are not so crazy about seafood. I found these in the Cane River Cuisine cook book which we got when attending a tour of the plantations festival in Natchitoches, LA. TI was published by one of my favorite customers wife group, while I was with 20th Century Fox. We have had many a good meal either taken for directly or tweaked by us.

Mama’s Seafood Gumbo

Ingredients:

  • 3 large white onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp. Oil
  • 1 package frozen sliced okra
  • 1 can tomatoes
  • 6 tbsp. Oil
  • 6 tbsp. Flour
  • 2 pounds cleaned deveined shrimp
  • 2 quarts water
  • 1 ½ cups chopped green onion and tops (scullions)
  • 1 cup chopped parsley
  • 4 bay leaves
  • 2 tsps. Thyme
  • Salt, pepper, red pepper flakes, and onion salt to taste
  • 6 dashes of tabasco
  • 1 can lump crabmeat
  • 1 16 ounce jar oysters

 

How:

Sauté white onions and garlic in 3 Tablespoons oil. Add okra and cover until okra becomes tender. Add tomatoes. Cook for about 15 minutes. Make a dark roux using 6 tablespoons flour and 6 tablespoons oil. Add 2 quarts water slowly to roux. Stir constantly. Add okra, onion, garlic and tomato mixture. Add chopped green onions and parsley, bay leafs and thyme. Add black pepper, red pepper flakes, onion, salt and tabasco. Let cook on medium heat for 1 ½ to 2 hours, add crabmeat and oysters, Allow to cook 3 to 5 minutes longer, Serves 8 to 10

Chicken and Okra Gumbo

Ingredients

  • 1 (2 pound) Fryer
  • 2 or 3 cups cut okra
  • 1 bell pepper, chopped
  • 1 can tomatoes
  • ½ cup oil
  • 2 tablespoons flour
  • 2 tablespoons oil or bacon drippings
  • Pinch of sweet basil
  • 2 cloves minced garlic
  • Salt and red pepper flakes to taste
  • Green onion tops, chopped fresh parsley or parsley flakes

How:

Cut chicken into pieces and boil in about 1 gallon water. Remove and debone. Cook okra, onions, bell pepper and tomatoes in oil slowly for about 30 minutes or until okra is not slimy. Make a roux with 2 tablespoons of flour and 2 tablespoons oil. Add roux, vegetables and chicken to hot chicken broth. Add other seasonings and cook slowly for about 2 hours. Before serving add fresh onion tops and parsley chopped fine. Serve over rice. Serves 6.

Why this recipe works:

A classic Italian antipasto, foraged wild mushrooms are rich with earthy flavor. The right combination of bright acidity, heady herbs, and the nap of a fine olive oil should pack each bite with a punch. When we developed our marinated mushroom recipe, we liked cremini and white button mushrooms for their flavor and availability. Crowding the mushrooms in a 12-inch skillet generated, at first, an alarming amount of liquid; cranking up the heat, however, reduced the liquid down to a potent glaze with concentrated mushroom flavor.

Skillet size limits the yield of this recipe; if you would like to double it, cook the mushrooms in two separate batches but marinate them together. Thyme, parsley, or basil makes a good last-minute addition—use only one, however, not all three.

Ingredients

  • 3 Tbsp. extra-virgin olive oil , *plus 1 tablespoon for finishing
  • 1/8 teaspoon red pepper flakes
  • ½ tsp. kosher salt (Steve tweak not much of one they use table salt)
  • 1 pound cremini mushrooms or white button mushrooms, cleaned, left whole if small, halved if medium, quartered if large
  • 2 Tbsp. juice from 1 lemon, plus 1 tablespoon for finishing
  • 1 medium clove garlic , sliced very thin
  • 1 large shallot , chopped fine (about 1/4 cup)
    • I have some dried shallot around because I usually forget to grab one at the grocery store in that case use about ½ the call for amount
  • 1/4 small red bell pepper , chopped fine (about 1/4 cup)
  • 1 sun dried dried tomatoes minced (Steve tweak)
  • *Zest of one lemon (Steve tweak)
  • *1 tsp. minced fresh thyme leaves or 1 tablespoon chopped fresh parsley or basil leaves (see note)
  • Ground black pepper

How

Heat 3 Tbsp. oil, red pepper flakes, and 1/2 teaspoon salt in 12-inch skillet over medium-high heat until shimmering but not smoking. Add mushrooms and 2 Tbsp. lemon juice; cook, stirring frequently, until mushrooms release moisture, moisture evaporates, and mushrooms have browned around edges, about 10 minutes. Spread mushrooms in single layer on large plate or rimmed baking sheet; cool to room temperature, about 20 minutes. When cooled, transfer mushrooms to medium bowl, leaving behind any juices. Stir garlic, shallot, and bell pepper into mushrooms, cover with plastic wrap, and refrigerate at least 6 or up to 24 hours.

*Combine the olive oil, lemon juice thyme and zest in small jar cover and set aside. I shake it once in a while just because I see it.

Before serving, allow mushrooms to stand at room temperature about 1 hour. Stir in remaining 1 tablespoon olive oil, 1 tablespoon lemon juice, thyme and zest and adjust seasonings with salt and pepper just before serving.

Continuing theme a night dinner plan it was vegetarian night again. We have fallen very nicely into the flow and I don’t have to peek at the calendar as much to figure out what tonight brings theme wise.

We love the taste of spinach and cheese but can’t say that I have tried this combination. The best thing was that I came home from work and the house smelled soooooo good. Lyn worked from home and had everything ready for me including a nice glass of wine with cheese and crackers. How lucky am I!

 Ingredients

  • 3 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 10 oz. package frozen chopped spinach, thawed , and squeezed dry
  • 3 cups cooked brown rice (small grain)
  • 1 cup diced extra sharp cheddar cheese
  • ½ tsp. freshly ground black pepper
  • ¼ tsp. salt
  • 4 large eggs
  • ¼ cup nonfat milk (we use lactose free)
  • 1 roasted red pepper cut in strips

How

Make sure your wife is working from home 🙂

Preheat the oven to 4250. Generously coat a 9 inch pie pan with cooking spray.

Heat oil in large skillet over medium heat.

Add Onion and cook. Stirring frequently until beginning to brown, about 5 minutes. Add garlic and cook 1 minute more. Transfer to a large bowl. Add rice, cheese, pepper and salt to the bowl and stir to combine.

Note: We thought after that some red-hot pepper flakes would be a nice touch if you wanted a little more heat.

Whisk eggs and milk in medium bowl then stir in rice mixture. Transfer to the pie pan and smooth the top with a spatula and arrange the roasted red pepper on top.

Bake the pie until lightly browned in spots about 25 minutes. Let stand for 5 minutes before cutting into wedges.

What does one do with a chicken breast that you took out of the freezer and had no plans for. My wife had mentioned stuffing chicken with feta last week so I guess that was my main influence. This was a real cook from the gut, open the frig and see what I have kind of creation. Boy you would think that with our new plan of a theme a day cooking I would be a little more organized but then some of my better meals came from the gut. Ok feta, red pepper, onions, mushroom, red wine, lemon and cherry tomatoes. Here we go!

Ingredients

  • 1 Chicken breast bone in with skin
  • About ¼ cup minced red bell pepper
  • About ½ cup feta crumbled
  • About 1 Tbsp. Dried Greek oregano
  • About 3-4 mushrooms roughly chopped
  • Fresh ground pepper (for my wife the pepper head)
  • 1 small onion quartered
  • 12 cherry tomatoes
  • 2 Tbsp. Lemon juice
  • About 1 cup red wine
  • Cornstarch and water combined.

How

Preheat oven with rake in middle to 450

In a small bowl mix pepper, feta, oregano, pepper together well.*

Rinse and thoroughly dry chicken

Sprinkle salt (lightly) and pepper all over the chicken

Gently loosen the skin on chicken with finger or fat end of butter knife to create a pocket.

Stuff the feta mixture into the pocket and then stick mushroom under skin on top of the feta.

Place in roasting pan (I used a corning ware dish) and drizzle olive oil over chicken.

Add the onions and tomatoes, enough red wine to cover the bottom and lemon juice.

Place in oven and turn heat down to 350

Cook until instant thermometer reads about 165 about 40 minutes. I started checking around 20 minutes because I was paranoid of drying out the chicken.

I crisped the skin by turning on the broiler for about 8-10 minutes still on middle rack.

Watch it though I kind of…what do they call it now on TV when the burn something. Oh ya look how beautifully caramelized it is!

Set chicken aside, pour the drippings into sauce pan add cornstarch bring to boil reduce heat slightly and simmer until thicken.  When it boiled I had to add more cornstarch to thicken a little more. Pour over chicken when plated.

*Steve note: You could mince the mushroom and mix with feta but to tell you the truth I forgot them and stuck them in after. That’s what happens when you empty from frig to counter then move to preparation area and forget something.

Lyn had been wanting a stew which was unusual for her she is not much of a stew person. Years ago we had made an Irish lamb stew but for the life of us could not remember where we saw it. So we must have look at a dozen recipes and I came up with this which was heavily influenced by Wholefoods. This stew came together easily, simmering on top of the stove for a couple of hours made another day of growling tummies.

Ingredients

  • 3 Tbsp. all-purpose flour
  • 1 tsp. fine sea salt
  • 1/2 tsp. ground black pepper
  • 2 pounds lamb stew meat, cut into 2-inch chunks
  • 2 Tbsp. extra-virgin olive oil
  • 4 cloves garlic, thinly sliced
  •  1 1/2 cups chicken broth
  • 1 cup dry white wine
  • 1 Tbsp. dried rosemary
  • 1 Tbsp. dried oregano
  • 2 cups chopped carrots
  • 1 pound small red or white potatoes, halved or cut into chunks
  • 1 cup fresh peas or frozen green peas, thawed
  • 2 teaspoons Dijon mustard
  • 1/4 cup thinly sliced green onions (About 1 scallion)

 How:

Combine flour, salt and pepper in a large bowl or plastic bag. Add lamb and toss to coat well.

Heat oil in a large heavy pot over medium high heat.

If needed working in batches (setting aside first batch in bowl), add lamb and brown on all sides set all lamb aside for a moment. Add the garlic and cook until you smell about 15 seconds to 1 minute.  Add chicken broth, wine, rosemary and oregano. Stir to combine add the lamb and bring to a boil. Reduce the heat to low, cover and simmer for 1 hour.

Stir in carrots and potatoes. Cover and continue to simmer 1 hour longer.

Stir in peas and mustard and simmer 3 to 10 minutes or until peas are just cooked through (frozen peas do not take as long to cook).

Ladle stew into bowls and garnish with green onions.

Sweet and Spicy Glazed Corned Beef

As I mentioned in my last post International Night – Makeshift Chili and Quesada we are working on a new idea for planning meals at least for us, and although Saturday is supposed to be fish night I went with corned beef and Guiness in honor of St Patrick’s Day. My son used to go crazy for corned beef NY York style deli sandwich so thick that you had to attach hinges to your jaws. In my family we call that a “Muriel Saver Sandwich”. She and Dagwood had that in common.

Anyway I tell you 60 minutes into the dish and the house started to smell soooooo good my stomach started to growl and the end results were great. We had tried Dijon mustard and brown sugar glaze a few years ago and I think I like that slightly better but this one was really good.

Ingredients

  • 1 Tbs. Peppercorns
  • 1 Tbs. Mustard Seeds
  • 4 bay leaves crushed
  • 1 cinnamon Stick broken into pieces
  • 2 tsp. whole cloves
  • ½ tsp. red-hot pepper flakes
  • ½ tsp. ground ginger
  • ¼ tsp. ground coriander
  • 1/8 tsp. ground allspice
  • 4 lb. corned beef brisket first cut (we prefer low sodium) you can use whatever cut you prefer.
  • 2-3 cloves of garlic crushed (depending on size)

Glaze

  • ¼ cup honey
  • ¼ cup chili sauce
  • 4 tsp. horseradish drained

How

Place oven rack on bottom third and preheat oven to 350

Combine the first 9 ingredients in a plastic storage bag and crush with rolling pin.

Empty into Dutch oven and place corned beef (I rinse but your choice), fat side up add the garlic and pour in enough water to cover with water. Discard the spice packet that comes with the meat. Cover and place in oven for 3 hours turning meat halfway. I used the Le Creuset Dutch oven and I am still trying to get used to cooking with so I turned the oven down to 300 at half way point. Any hints on using these are welcomed.

In a small bowl combine the 3 ingredients for glaze

Remove beef from oven, move the rack to middle and preheat to 450

Line a baking sheet with foil and place the cooked corned beef fat side up.

Brush about ½ of glaze over the top and sides of the corned beef. Roast in oven for 15 minutes brushing with remaining glaze about half way through. Glaze should start to caramelize.

Let stand cover loosely for 5-15 minutes before slicing against the grain.

Now we chose to serve with smashed garlic potatoes and oven roasted Brussels sprouts but you could choose to go more traditional with cabbage wedges and some carrots on the second turning but you may have to adjust cooking time up slightly.

Orange Flavored Chicken but Healthier

When I first tasted orange flavored chicken in Texas I loved it, goodbye General Tso’s chicken and swore I would master making it. I kept orange peels in the freezer at all times to add to the dish. I was never able to master it, came close but then I found Trader Joe’s Orange flavored chicken and for a frozen brand it was pretty darn good and yes I became lazy. You could add peppers, stir fried vegetables with a bed of brown rice and you had an instant meal well almost instant it took about 40 minutes to cook. My wife showed me Hungry Girl’s recipe the other day and I liked what I saw I was always looking for healthier alternatives.  So here it is heavily influenced by Hungry Girl who has inspired me many times in the past.

Ingredients:

  • 1/4 cup whole-wheat flour
  • 10 oz. raw boneless skinless chicken breast, cut into bite-sized pieces
  • 1/8 tsp. each salt and black pepper
  • 1 small egg or 1/4 cup fat-free liquid egg substitute
  • 1/4 cup fat-free chicken broth
  • 1 tbsp. cornstarch
  • 1 1/2 tbsp. sugar-free orange marmalade
  • 1 1/2 tbsp. seasoned rice vinegar
  • 1 tbsp. maple sugar or she suggests Splenda (granulated)
  • 1 tbsp. reduced-sodium/lite soy sauce
  • 1 tsp. chopped garlic
  • 1 tsp. chopped ginger
  • Dash red pepper flakes
  • 2-3 chopped scallions, whites and crisper greens  about ¼ to ½” size

How:

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Place flour in a plastic bag or shallow dish. (See below for optional directions)

Place chicken in a large bowl and season with salt and pepper. Top with egg substitute and toss to coat.

Place flour in plastic bag and divide chicken into 3 portions, shake chicken pieces to remove excess egg and place in bag and shake to coat with flour. Shake off excess flour and evenly lay chicken pieces on the baking sheet. You can fold some flatter pieces in half so cooking in even

Place flour on shallow dish and a few pieces at a time shake chicken pieces to remove excess egg and coat with flour. Shake off excess flour and evenly lay chicken pieces on the baking sheet. You can fold some flatter pieces in half so cooking in even.

Bake for 10 minutes, or until chicken is cooked through.

In a medium bowl, whisk broth with cornstarch until cornstarch has dissolved. Add marmalade, vinegar, sweetener, and soy sauce, and thoroughly whisk.

Bring a skillet sprayed with nonstick spray to medium heat. Cook and stir garlic and ginger until slightly softened and fragrant, about 1 minute. Add broth mixture and red pepper flakes. Cook and stir until well mixed and slightly thickened, 1 to 2 minutes.

Remove skillet from heat, add chicken, and toss to coat. Serve topped with scallions.

    Orange Chicken

Fried Chicken Szechwan Style

This is a dish that I usually cook on bachelor night since Lyn feels there might be too much oil. Steam some broccoli or asparagus for a side dish and you are good to go. Fairly easy and uncomplicated and for me…. I just like it.

Ingredients

  • 1 lbs. of boneless chicken breast or thighs

 Coating

  • 2 Tbsp. corn flour
  • 1 tsp. salt
  • ½ teaspoon five spice powder

 Sauce

  • ½ cup chicken broth
  • 2 tsp. sugar
  • 1 Tbsp. light soy sauce
  • ½ tsp. sesame oil
  • 1 tsp. vinegar
  • 2 tsps. chinese wine or dry sherry
  • Extra ¼ tsp. five spice powder
  • ½ tsp. fresh ground black pepper

 Thickener

  • 2 tsps. Corn flour
  • 1 Tbsp. cold water

Cooking

  • ½ cup peanut or other oil for frying. You could use less oil if you wanted that keeps my wife happy.

 Spice

  • 15 dried red chilies, seeded
  • 2 cloves garlic finely chopped
  • 2 tsps. Finely chopped fresh ginger.  Fresh is best but I always have some whole ginger in the freezer
  • 3 scallions, cut into 2 inch long pieces (white and greens).

How:

Cut chicken into bite size pieces (sometimes partially freezing make the cutting easier)

In a plastic bag mix together the corn flour, salt, and five spice powder. Shake to mix. Add chicken and shake to coat.  Remove chicken from bag, shaking off excess corn flour mixture and place chicken aside. This can be done in a glass bowl instead of a plastic bag that keeps my wife happy.

In another bowl mix together chicken stock, sugar, soy sauce, sesame oil, vinegar, wine, ¼ tsp. five spice and pepper together.

In another small bowl mix the corn flour and cold water.

Heat the oil in a wok and when VERY hot add chicken pieces, in 3 batches and fry on high heat tossing to brown all over.  Batches allow the chicken to cook rather than steam if oil gets to cool. Allow the oil to heat up again between batches. Place each batch on absorbent paper towel that are on a dish or tray so counter does not get all oily, ok ok I learned a lesson way back when.  When all the chicken has been fried pour off all but about 2 Tbsp. of the oil.

With the exhaust vent on add the chilies, garlic and ginger and fry until the garlic and ginger are golden and the chilies turn dark. Does not take long.

Add the scallions and toss a few seconds then add the stock mixture and bring to a boil. Stir in the corn flour mixture again to mix smoothly and add to the pan, stirring constantly until it boils and thickens. Add the chicken and toss to coat and heat through.

Serve immediately with steam brown or white rice.

Twist that I have done over the years

  • Added fresh red or mix color peppers or substitute just peppers for chilies, a milder dish
  • Left the chilies seeds in for a spicier dish
  • Add unsalted peanuts or raw cashews

What was a Sunday dinner at Rose’s without meatballs? This is a dish that a pinch of and a handful of that really comes to play. A dish that my side of the family would kill for, a plate of pasta topped with some of Rose’s meatballs.  Lyn and I used to sneak these into Dad when he was in the hospital. Well this was my first try and Lyn says I did ok. You really have to make these every week so you get it down. But then I would be 900 lbs. Quick easy but soooooo good.

I must first say we will probably never be able to master what she did but practice is a lot of fun.

Ingredients

  • 2 lbs. of ground sirloin I used 93% lean
  • 4 eggs – 2 per lbs
  • About 3 handfuls of seasons bread crumbs, each handful was about 1/4 cup
  • About a tablespoon or dried parsley (about a table spoon)
  • About 1/3 cup grated parmigiano reggiano cheese
  • About a table spoon of dried basil (about a table spoon)
  • A couple of teaspoon of garlic powder
  • About a tablespoon of onion powder
  • 1 tsp. Salt and fresh ground pepper

How:

Preheat oven to 350◦

Line a backing sheet with high sides with tin foil and drizzle with then and spread olive oil

Mix all ingredients together thoroughly. Using a medium ice cream scoop, scoop out and shape into 2” balls. (Approximately) and line the pan with meatballs leaving a little space between each. Bake for about 20-30 minutes, checking after 30 minutes. The will be firm but not too firm. You can place sauce until ready to serve.

Note: for Xmas I put in sauce and let them simmer with the sauce they came out very moist and as Lyn said melted in your mouth.
