Reign On American Chop Suey – Week 15

Everyone has their own comfort foods, I have many but one of my favorites is American Chop Suey. This recipe is what I have come up with that is closest to what my mind remembers as my mother’s plus the red hot pepper flakes. The Pat’s are getting ready to grab the division and top place but they are playing in the nice warm weather, so as we  prepare for 8-12 inches of snow depending where you why not try this nice warm me up game time treat.

Ingredients:

  • 1 lb. lean Ground beef I MADE FOOD PROCESSOR GROUND BEEF
  • 1 onion chopped roughly
  • 2 stalks celery, thinly sliced
  • 1 green pepper cored, seeded and chopped
  • 28 oz. can whole tomatoes
  • 15 oz. can tomato sauce
  • 1 lb. box Elbow macaroni
  • Salt, pepper, oregano, basil, red-hot pepper flakes to taste about 1 tablespoon each
  • Ketchup (optional, not for me)

How:

In a fry pan cook hamburger, onion, and celery until meat is browned and the veggies are limp but still have some crunch left. While browning chop up the beef into small chunks. Drain off the grease.

Step 1

Crush tomatoes by hand over the pan, pour in the juice from the can and the tomato sauce.

Add whatever spices you are comfortable with. I use salt, pepper, oregano, basil, (I suppose a short cut could be Italian seasoning mix) a good pinch of crushed red pepper flakes depends on your hotness taste. Add the chopped green pepper at this point I feel it kept them a little crunchier but I suppose you could add in the first step.

Bring to a boil and simmer for five minutes.

Meanwhile, bring five quarts of water to a boil, add the macaroni, and cook for about five minutes. The pasta should be aldente, not thoroughly cooked. Drain, return to pot and add the contents of the other pan. Gently simmer for five minutes to finish cooking the macaroni and to let it absorb the liquid.

Remove from heat, and put it to the side. I find that letting it sit for at least a half hour lets the flavors really come together I also stir occasionally to help cool and not over cook the pasta.

Ok now I was raised to top with ketchup when served but this is strictly optional, it just does not taste right to me without, what can I say?

Ingredients:

  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1 1/4 lbs. raw lean ground turkey (7% fat or less)
  • 3/4 cup canned crushed tomatoes
  • 1/3 cup seeded and finely chopped jalapeño peppers
  • 1/4 cup quick-cooking oats
  • 1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)- I used one real egg
  • 1/4 cup frozen sweet corn kernels, thawed
  • 1/4 cup canned black beans, drained and rinsed
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 3 tbsp. ketchup
  • 1/4 cup shredded reduced-fat Mexican-blend cheese
  • Optional toppings: salsa, fat-free or light sour cream, hot sauce

How:

Preheat oven to 350 degrees. Line 10 cups of a 12-cup muffin pan with foil baking cups, or spray them with nonstick spray.

Bring a skillet sprayed with nonstick spray to medium heat. Cook and stir bell pepper and onion until softened and lightly browned, 5 – 7 minutes.

Transfer cooked veggies to a large bowl. Add all remaining ingredients except ketchup and cheese. Mix thoroughly.

Evenly distribute mixture among the 10 lined or sprayed cups of the muffin pan. Evenly top with ketchup, about 1 tsp. each. Bake until firm and cooked through with lightly browned edges, about 35 minutes.

Sprinkle meatloaves with cheese. Bake until cheese has melted, about 2 minutes.

Sliders and Crispy Brussel Sprouts and oven Baked Fries

I had these dinner rolls in the freezer left over from a recent holiday. We don’t eat much bread these days and did not want it to get freezer burned so I decided they were perfect for sliders.

Ingredients

  • Ground beef
  • Lettuce
  • cherry tomatoes halved
  • Cheddar Cheese
  • Small Dinner rolls
  • Brussel Sprouts
  • Baking potato

How:

Potatoes and Brussel sprouts – Prepare separately but you can cook together

Slice potatoes to about ¼ in width. Microwave for about 1-2 minutes

Slice Brussel sprouts in half

Drizzle with olive oil and sprinkle desired spices and herbs toss to coat well

Roast at 400-450 for 20-35 minutes or until done.

Sliders

Form patties and cook to desired doneness (grill, broiler, pan fried you pick)

Add cheese if you want to melt

Place on roll top with lettuce, tomatoes and condiment

In the 1940s, Walter Anderson formed White Castle and made sure it’s image was as pure and clean as possible.

He also wanted his burgers to be as low cost as possible so he made them small and came up with his own streamlined and efficient cooking process that is still unique in the business today.

The small 5 cent burger that he came up with is what is now affectionately known as a Slider and has become its very own sub-category of burger. White Castle sells its own original burgers under the trademark Slyders, these will always be known as the first and the best.
