We bought a bunch onions  for Thanksgiving but for one reason or another the anticipated crowd became 4 .

So as the song goes

Slice them up and make a relish 

Cook them down and make a relish

Add apple cider vinegar and sugar to make a relish

Sweet-meets-savory relish gives a refreshing kick to this quick-to-fix main dish — the only prep step is chopping the onions.

Ingredients:

•             2  tablespoon(s) olive oil

•             4  large (2+-pound) sweet onion, thinly sliced

•             6  tablespoon(s) sugar

•             6  tablespoon(s) cider vinegar

•             1  teaspoon(s) salt

How:

In 12-inch, nonstick skillet, heat 1 tablespoon olive oil on medium 1 minute.

Add sliced onion and cook 15- 25 minutes or until very soft, stirring occasionally.

Stir in sugar, cider vinegar, and salt. Reduce heat to low and simmer 5-10 minutes longer.

Makes about 2 cup relish.

Was great on my Chicken cutlet sandwich or Oven fried

Basic Recipe for Greek Salad Dressing

The simplest of all salad dressings is a drizzle of Greek extra virgin olive oil and wedges of lemon on the side – squeeze to taste. For salads with feta cheese like the Greek Salad, I recommend straight olive oil (with a little water). For salads with cucumber, I like oil and vinegar.

Ingredients

For 1 cup of dressing:

  •  3/4 cup of Greek extra virgin olive oil
  • 1/4 cup of good quality red wine vinegar
  • 1 1/2 teaspoons of crushed Greek oregano
  • 1 teaspoon of salt
  • a pinch of pepper.

How:

Whisk together in a bowl, or place in a tightly covered jar and shake to combine. The dressing will turn a light color with a creamy texture as the oil and vinegar combine.

Tip Add Dill: add 1 teaspoon of dried dill to the dressing nice touch!

Quick Cucumber Salad

 

 Dressing

  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons grated gingerroot
  • ½ teaspoon salt

Salad

  • ½ medium cucumber, cut in half lengthwise, thinly sliced
  • ¼ red bell pepper, diced
  • 3 green onions, thinly sliced
  • 1 teaspoon chopped fresh cilantro

How:

Combine you can let sit in frig to let flavors come together or server right away as side or topping

We bought a bunch of red onions and remembered something we had made a long time ago turkey cutlets with red onion relish so I quickly decided we need some of this relish in the frig, it was good on that dish as well as chicken, burgers and on top of a regular salad.

Ingredients

  • tablespoons  unsalted butter
  • 2   garlic cloves, minced
  • 2 teaspoons  onion powder
  • 1 teaspoon  pepper
  • 1/2 teaspoon  salt
  • 2 teaspoons  soy sauce

First

Melt butter in 8-inch skillet over medium-low heat. Add garlic, onion powder, pepper, and salt and cook until fragrant, about 1 minute.

Pour all but 1 tablespoon butter mixture into bowl and let that cool slightly, about 5 minutes, save to mix in hamburger meat.

  • 2 tablespoons  tomato paste
  • 2/3 cup  beef broth
  • 1/3 cup  raisins
  • 2 tablespoons  soy sauce
  • 2 tablespoons  Dijon mustard
  • 2 tablespoons  balsamic vinegar
  • 1 tablespoon  Worcestershire sauce

How:

Add tomato paste to skillet and cook over medium heat until paste begins to darken, 1 to 2 minutes. Stir in broth, raisins, soy sauce, mustard, vinegar, and Worcestershire and simmer until raisins plump, about 5 minutes. Process sauce in blender until smooth, about 30 seconds; transfer to bowl.

Eastover Sunday rolls around but once a year in years past we used to have larger crowds but with everyone spread out all over the country and others watching from above well we are a smaller group these days. That’s fine with me because two of my favorite people came. Laurel and Mike (our son). In our combined families there are tons of Mikes so I have to distinguish which one when talking about a Mike. Laurel fills the air with excitement this visit she was showing off their new couch (pictures) and later the sweater she was knitting. She enjoys cooking as much as we do and show the correct amount of excitement when I pull out my new carving knife, yes a true foodie. Mike turned Lyn on to Snap Chat a program where you send a still or a 10 second video that once viewed by the recipient disappears forever. She gets so excited and nervous at the same time when she receives on and is remembering to keep pressing to view. She announced this morning that “I got a Snap Chat with Laurel modeling her new sweater!!” I teased and said let me see it. Each year we say the same thing this was the best meal since last Eastover and to me the company made it!  For us this recipe was originally in Sonoma Diet cook book, I can’t believe I never posted it we make it often. When you Google it, it shows up under many names and faces and it should it is quick easy and simply delicious spread the news.

Ingredients

  • 6 – 4-ounce fresh or frozen skinless, boneless salmon fillets, about 1 inch thick
  • 1 tablespoon sweet paprika
  • 1 tablespoon smoked paprika or ground ancho chile pepper
  • 1 tablespoon chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano, crushed
  • 3 tablespoons extra-virgin olive oil

Note: This rub is good on steaks also.

How

Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Measure thickness of fish. Set aside.

In a small bowl combine sweet paprika, smoked paprika, chili powder, kosher salt, garlic powder, black pepper, cumin, and oregano. Transfer spice mixture to a piece of waxed paper. Gently roll fish fillets in spice mixture to coat.

Brush about half of the olive oil in the bottom of a broiler pan or 15x10x1-inch baking pan. Place fish fillets in prepared pan; turn any thin portions under to make uniform thickness. Drizzle tops of fish with remaining olive oil. Broil fish 4 inches from the heat for 4 to 6 minutes per 1/2-inch thickness of fish or until fish flakes easily when tested with a fork, carefully turning once halfway through broiling. Whoops I forgot to do this, this time no wonder Lyn and I remembered crispy skin.

Roast Chicken with Orange-Spice Rub

I think I mentioned I got 3 whole organic chickens at Wholefoods a few weeks ago and I took one out of the freezer because we were getting ready for yet another snow storm filled weekend. We’ve had close to 100” on snow this year and we were all praying for a winter like last year. Well those of us who don’t ski that is. This recipe was adapted from Diabetes and Heart Healthy Cookbook published by American Heart Association. I adapted it for chicken they did a 5 lbs. turkey breast. The smell of this spice rubbed chicken, was driving us crazy while it cooked. Yes it was one of Lyn free meals this week.

 

Ingredients:

Ingredients

  • 1 tablespoon grated orange zest
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sweet smoked paprika
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 whole roster chicken
  • 1- 2 teaspoons of soften unsalted butter.
  • 1 small navel orange cut in quarter

 

How:

Preheat the oven to 325 degrees.

Spray a roasting pan and baking rack with nonstick cooking spray and set aside.

In a small bowl, stir together the spices.

Rub small amount of rub inside the cavity of chicken.

Stuff orange in cavity, you can add some onion if you want.

Using your back end of regular knife, place under breast skin and loosen the skin from the breast

Rub the butter under skin on as much of the breast as you can

Rub spice mixture evenly under and over the skin.

Wrap in plastic wrap and refrigerate for at least 4 hours (this step could be skipped and it can go straight to oven)

Wrap in plastic wrap and refrigerate.

Bring to room temperature

Place the chicken on the rack in the roasting pan, and insert a meat thermometer in the thickest part of the thigh making sure it doesn’t touch the bone.

Roast, uncovered, for meat thermometer 170 degrees (if skin becomes to brown you can loosely tent with tin foil.

Let the chicken stand for 15 minutes.

Serve

Carve the chicken and enjoy.

Lyn’s Cranberry Compote

Cranberry sauce is something we love and every year we try another recipe this year a repeat, one we tried way back in 2002 from YankeeMagazine recipe and liked. With our own twist of course.

Yield: 18-20 servings

This tangy cranberry compote is a great way to refresh your taste buds mid-meal.

Ingredients

  • 1 cup dried cranberries (you can substitute raisins)
  • 1 12-ounce package cranberries
  • 1 cup maple syrup (or sugar)
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/8 teaspoon ground cloves
  • 3/4 cup cider vinegar
  • 1 tablespoon grated lemon peel
  • 1/4 cup orange juice
  • 1/4 cup water
  • Garnish: orange zest

How

In a large saucepan over medium heat, combine all ingredients. Cover mixture and cook 20 minutes, stirring occasionally. Cool in pan. Transfer to a glass jar with an airtight lid, cover, and refrigerate. When ready to serve, pour compote into a serving dish and garnish with orange zest.
